Coconut Tarts


Recipe from my baking guru, Mdm Liliy Yeoh

Pastry Ingredients:
5 ozs butter
4 ozs castor sugar
lemon paste or vanilin
11 ozs plain flour
pinch of salt
1 egg
1/4 tsp baking powder

Method:
1. Cream butter and sugar till cream white, add in the egg cream till well mixed.
2. Fold flour into butter mixtures till it become a soft dough and divide into small portion.
3. Line dough into small pie mould and prick some hole on pastry.

Filling ingredients (recipe from '简易西点蛋糕制作', 许金祥):
1 egg
38g sugar
1/2 tsp baking powder
38g butter
1/4 cup milk
57g coconut (grated)

Method:
1. Mix well the egg and sugar, add in baking powder.
2. Mix in the butter and milk.
3. Add the grated coconut, mix well and pipe into the pastry shell. Bake at 180 deg C for 30 mins till golden brown.
