Chocolate Cake

I usually top this cake with some raw walnuts for decoration. Use Big walnuts to avoid the outer layer from getting burnt easily.

Ingredients
1 cup boiling water
1/2 cup unsweetened cocoa powder, sifted
227 grams unsalted butter
300 grams castor sugar
3 large eggs
1 tsp vanilla essence
235 grams all-purpose flour
15 grams baking powder
3/4 tsp salt

optional: chocolate ganache to serve

Method
  1. Combine boiling water and cocoa powder until well mixed. Cool.
  2. In a separate bowl beat butter and sugar until fluffy. Add eggs one at a time. Add vanilla essence.
  3. Sift together flour, baking powder and salt. Fold into the butter mixture alternately with the cocoa mixture.
  4. Pour the batter into a 22cm cake pan lined with parchment paper, greased with butter and slightly floured. Bake at 170 deg C for 25 to 35 minutes.
  5. Serve plain or with chocolate ganache.
