Skinny Apple Strudel (Healthy version)

Ingredients (Dough)
75ml water
25g corn oil
1/2 egg
160g plain flour
A pinch of salt

Strudel filing
250g Granny Smith apples, peeled, cored and cubed
1.5 lemon, squeeze juice and grate zest
25g ground almonds
75g breadcrumbs
50g sugar
15g melted butter
Icing sugar for dusting

Method
  • Dough
  1. Put all the ingredients into a large mixing bowl. Mix using the dough hooks of the food processor until the mixture forms a ball
  2. Continue mixing for 2 minutes
  3. Take the dough out of the bowl
  4. Put into an oiled bowl, cover with cling film and leave to rest for 15 minutes
  • Strudel
  1. Toss the apples, lemon juice and zest in a mixing bowl. Add the sugar, cinnamon, ground almond and raisins to make the apple filling
  2. Place a cloth or cling film to line a table. Stretch the dough until paper-thin.
  3. Brush the dough with melted butter. Spread the breadcrumbs evenly on the dough and top with the apple filling
  4. Roll the dough. Trim off both ends with a knife
  5. Brush the roll with melted butter and bake at 200 deg C for 20 minutes, or until golden brown
  6. Sprinkle icing sugar on the apple strudel before serving. Best served hot
